We just made our lunches and breakfasts for the week.
What we used:
2 1/2 dozen eggs
cottage cheese
3 roma tomatoes
2 large cucumbers
2 avocados
1/2 package turkey bacon
1/2 can black beans
3/4 can black olives
6 oz mild cheddar cheese
1 package mushrooms
2 limes
artisan lettuce
1/2 small onion
3 boneless chicken breasts
What's left over:
baby spinach
1/2 package turkey bacon
1 lime
8 oz swiss cheese
1 lb deli turkey
1 container cottage cheese
green olives
lettuce
2 avocado
1 chicken breast
green olives
carrots
cilantro
1/2 can black olives
2 packages grape tomatoes
Basically, we have enough left over for more salads if we need them for dinner, or Nick can make some when he gets in from school. Many of the ingredients will carry over to next week's salads and some will go in meals for the week.
What we made:
- 2 chicken taco salads (similar to last week)
- 2 grilled chicken salads with dressing (similar to last week)
- 3 grilled chicken salads with cottage cheese (one for Nick)
- 2 bowls of chicken avocado salad
- 12 egg cups (using this method in my regular muffin pan); will eat with a piece or two of turkey bacon in the mornings
- Scrambled eggs with tomato and mushrooms; Bobby will use to make wraps for his breakfasts
- 3 boiled eggs to use for grab n go snacks

Last week's meals included:
Rice with chicken and Campbell's Skillet Sauce
Hamburgers (not a norm!)
Fajitas (at home)
Salmon patties and brussel sprouts
Fajitas (dinner out)
This week, we plan to have:
Spinach burgers (tonight) with baked fries
Meatball subs (turkey meatballs)
Chili potatoes
Chicken with artichoke hearts and feta
Baked "fried" chicken with grilled cabbage
Spaghetti with ground turkey
Salmon patties
In continuing to work on me, I have been keeping on top of things that my mind viewed as big and overwhelming projects and I feel good about it. I did do my homework with 2 hours to spare this week, but it was super busy at work and I just couldn't find the time. I'm going to try diligently to not let that become a habit.
